Executive Chef – Japanese Cuisine – Asheville, NC

We are looking for an Executive Chef versed in all aspects of Japanese cooking for a top ramen and sushi concept opening in Asheville later this summer. This chef-driven concept will produce dishes at the highest level with hand made ramen noodles and fish sourced from seafood purveyors in Japan. The ideal candidate comes from a big league operation who is looking for a change to a smaller market. Asheville offers exceptional living surrounded by the Blueridge Mountains with a city full of great restaurants and craft breweries which are few of the reason Asheville has been ranked one of the "Best Places to Live" by Livability.


Additional Responsibilities for the Executive Chef:
• Coordinate food and kitchenware purchase orders
• Ensure freshness and quality of ingredients (high bar)
• Assist in the execution of existing menu items at the highest level as well as creating of new menus items
• Manage and oversee hourly kitchen staff and sous chefs
• Must be familiar with HACCP food safety regulations and processes

Skills/Requirements for the Executive Chef:
• 10+ years chef experience with upscale casual Japanese restaurant
• Familiarity with HACCP food safety planning and implementation
• Fluency in Japanese a plus
