We are assisting our client with a search for an Executive Chef for a new restaurant opening in Charlotte's Southend with a blend of traditional and modern Italian cuisine. Extensive background with Italian cuisine, woodfire grill and Neapolitan pizza a must. This is a chef-driven restaurant group with a great culture and room for growth. Chefs love working for this group.
*Responsible for food production, consistency, and training of Cuisine both traditional & modern culinary techniques.
*Ensures all recipes and food preparation are followed and accurate per company standards.
*Verifies kitchen staff follows all recipes and portions servings correctly.
*Documenting new menu items with both recipe and photo.
*Daily payroll management of staff hours, by enforcing adherence to written schedules.
*Maintaining a clean and sanitary kitchen to the DOH specifications.
*Supervise the organization and maintenance of walk-in refrigerators, dry storage, and any other food storage areas.
*Daily and weekly ordering of produce, dry goods, and other food & kitchen products.
*Daily pre-shift preparation of food production, & Mise en place for all kitchen stations.
*Responsible for keeping a consistently high quality of food in the kitchen.
