Experienced, Upscale-Dining Executive Sushi Chef needed for Charlestons top Japanese restaurant. Candidates MUST have Japanese food/sushi knowledge and high volume experience. The ideal candidate must have a passion for guest service and drive for achieving results. Chefs with a minimum of 2 years in a similar position will be considered and we prefer experience in a concept with strong sales of at least $3 plus million annually. This is an exciting and dynamic concept looking for exceptional leadership. The position is very "hands-on" and candidates must be very strong in guest service, all facets of operations and have proven skills in analyzing financials and maintaining cost control systems.
*Maintain quality and standards of existing menu
* Create and execute new menu items that match restaurants high standards
*Maintain smooth and efficient kitchen functionality during service
*Research, develop and implement innovative menu/recipe items to increase individual restaurant's profitability
*Train kitchen staff on effectively managing costs while maintaining the recipe standards, and the cooking and preparation procedures
*Maintain cost structure by improving BOH operating efficiency, maximizing the productivity of the staff, developing new procedures or streamlining processes; including receiving, preparation and cooking procedures and product mix optimization
*Management of labor scheduling/budget control
*Support staff on improving skill sets and provide the appropriate toolset to perform well
*Maintain vendor relationships and efficient ordering practices.
Estimate food consumption and requisition for purchasing product
Maintain clean and organized workspace including guiding overnight cleaning staff in proper health code standards
Manage and expedite the flow of orders during service
Ensure proper equipment operation/maintenance
